Brick cheese is a cheese with a long history in Wisconsin. First made by Wisconsin cheesemakers in the late 1800s, it was quite naturally named after the bricks they used to press the casein. Young Brick cheese is mild and delicious with a subtle nutty flavor. However, as it ages, it develops a more complex, pungent, and sometimes tangy taste. Brick can be considered a milder, more subdued version of that infamous German stinky cheese, Limburger.
