Crooked Stave Pure Spon (750ml)

A collaboration with San Diego's Pure Project. A complex blend of wild yeast, aged hops, and barrel-derived aromas and flavors. Recommended for sour beer and natural wine lovers!

Spontaneous Ale is a collaboration with San Diego's famous brewery Pure Project.

The beer is mashed using the traditional Turbid Mashing technique, which is also used at Cantillon Brewery, and then whole cone hops that have been aged for four years are added and the beer is boiled for three hours.

It is left in a coolship overnight to allow the wild yeasts to take hold, then transferred to large puncheon barrels for fermentation.

Bottling is scheduled for February 2022.

Even after bottling, the flavor continues to change subtly depending on the bottle conditions (secondary fermentation in the bottle).
