Crooked Stave Pure Spon (750ml)

A collaboration with Pure Project from San Diego. Wild yeast, aged hops, and barrel-derived aromas and flavors intertwine in a complex way. Recommended for sour beer and natural wine lovers!

This is a Spontaneous Ale created in collaboration with Pure Project, a famous brewery from San Diego.

Using the traditional Turbid Mashing technique, also adopted by Cantillon Brewery, the wort was mashed, then 4-year aged whole cone hops were added and boiled for 3 hours.

After that, it was left overnight in a coolship to pick up wild yeast, then transferred to large puncheon barrels for fermentation.

Bottling was in February 2022.

Even after bottling, the flavor continues to subtly change due to bottle conditioning (secondary fermentation in the bottle).

This exquisite beer is recommended for those who love sour beers and natural wines!
