This wine is aged for three months with spent nectarines from Masumoto Family Farm, then fermented and conditioned in a champagne bottle for three months. The fruity, earthy notes, and acidity from the yeast combine to create a refined flavor.
This naturally fermented wild ale is made with Le Grand Nectarine from the 2024 harvest from Masumoto Family Farm, a family-run farm that grows organic nectarines, apricots, peaches, and grapes in California's Central Valley.
After previously making two types of beer using the same fruit, the spent nectarines were reused.
We added spent nectarines to a newly brewed Saison beer and let the yeast and bacteria remaining from the previous fermentation do their natural work.
After aging with nectarines for three months, the wine was bottled in 750ml champagne bottles with corks and cages, and then underwent a secondary fermentation and conditioning for a further three months, resulting in a delicate and refined flavor.
