Aged for 3 months with spent nectarines from Masumoto Family Farm, then bottle conditioned for 3 months in champagne bottles. A refined flavor with a harmonious blend of fruitiness, earthiness, and yeast-derived acidity.
This is a wild ale naturally fermented using Le Grand Nectarines from the 2024 harvest at Masumoto Family Farm, a family-owned farm in California's Central Valley that organically grows nectarines, apricots, peaches, and grapes.
After producing two types of beer with the same fruit in the past, we re-utilized the spent nectarines.
We added the spent nectarines to a newly brewed Saison beer, allowing the natural action of the yeasts and bacteria remaining from the previous fermentation to take over.
After aging with the nectarines for 3 months, it was refermented and conditioned for an additional 3 months in 750ml champagne bottles with corks and cages, resulting in a delicate and refined flavor.
