Aged for 18 months in red wine barrels and 9 months in the bottle. Mineral notes, pear, orange peel, vanilla, and floral flavors with a wild character from the oak barrels.

This is a saison beer fermented with spelt wheat and multiple yeast strains, then aged in puncheon barrels (large barrels used for fermenting wine, etc.).

Puncheon barrels are larger than typical wine barrels, allowing for a slower aging process that is known to refine the flavor.

This beer was aged for 18 months in puncheon barrels, and then bottled and aged for another 9 months.

It offers beautiful minerality, juicy pear, dried orange peel, vanilla, delicate floral aromas, and subtle hints of wildness and acidity, making it a perfect beer to savor slowly.
