The Veil All That I Am (750ml)

Aged for 18 months in red wine barrels and 9 months in bottle. Mineral, pear, orange peel, vanilla and floral flavors, and wild flavor from the wooden barrels.

A saison beer fermented using spelt wheat and multiple yeasts and aged in a puncheon barrel (a large barrel used for fermenting wine, etc.).

Puncheon barrels are larger than conventional wine barrels, which allows for a slower maturation process and a more refined flavour.

This wine is aged for 18 months in puncheon barrels and then bottled for another 9 months.

It has a beautiful minerality, delicate aromas of fresh pear, dried orange peel, vanilla, and fresh flowers, and a subtle hint of wildness and acidity, making it a masterpiece that is best enjoyed slowly over time.
