The aroma of ripe peach has a refreshing and delicate peach and apricot flavor with a mellow lactic acidity. The aged hops give it a funky farmhouse feel. The soft fizz, tannic flavor and soft bitterness linger on the tongue.
The Fated Farmer series embodies Trillium's concept of "connecting New England agriculture, brewing, and the communities that live there."
All of the wild ales in this series are made using malt from Valley Malt, which is made locally in Massachusetts.
The wine is fermented in a 500L puncheon barrel using local wild yeast and aged for about six months, after which freshly harvested fruit is added and the wine is allowed to undergo a secondary fermentation.
The theme is to explore what flavors can be created by combining natural agricultural produce with wild ale.
This wild ale is made with freshly picked peaches sourced locally from Lookout Farm in Massachusetts, and is characterized by its refreshing and noble flavor.
It has an aroma reminiscent of ripe peach pulp, a refreshing and delicate taste reminiscent of peach and apricot, and a mellow lactic acidity.
A slightly funky farmhouse cheese flavor from aged hops.
Clean, bright flavors and soft effervescence burst in the mouth, with tannic notes and a soft bitterness lingering on the tongue.
