This beer was fermented with wild yeast harvested from grape skins, aged for 16 months in French Chardonnay barrels, then aged for 3 months with apricots in stainless steel tanks. It contains twice the amount of apricots compared to the regular version.
Apricot Stonington is a beer deeply cherished by Trillium founders JC and Esther.
It is fermented using wild yeast harvested from grape skins at Saltwater Farm Vineyard in Stonington, Connecticut, the very winery where they got married and were inspired to start their brewery.
After fermentation, it is aged for 16 months in French oak Chardonnay barrels, and then slowly undergoes secondary fermentation with apricots in stainless steel tanks.
This Double Apricot Stonington uses twice the amount of apricots (approximately 2kg per 3.8L) for secondary fermentation compared to the regular version, resulting in a lower alcohol content.
The apricot juiciness is further enhanced, making it a masterpiece that even those new to wild ales can easily enjoy.
