The beer is fermented with wild yeast extracted from grape skins and aged in French Chardonnay barrels for 16 months, then aged in stainless steel barrels with apricots for three months. It uses twice the amount of apricots compared to the regular version.
Apricot Stonington is a beer that is very dear to Trillium founders JC and Esther.
The wine is fermented using wild yeast extracted from grape skins at Saltwater Farm Vineyard in Stonington, Connecticut, the winery where the couple was married and which inspired them to decide to start a brewery.
After fermentation, the wine is aged for 16 months in French oak Chardonnay barrels before being slowly placed in stainless steel tanks with apricots for a second fermentation.
This Double Apricot Stonington uses twice the amount of apricots (approximately 2kg per 3.8L) and undergoes a secondary fermentation compared to the regular version, resulting in a lower alcohol content.
The apricot juice flavor has been enhanced, making this a masterpiece that even those drinking wild ale for the first time can enjoy.
