This masterpiece is fermented with wild yeast extracted from grape skins, aged for 16 months in French Chardonnay barrels, and then aged for three months in stainless steel barrels with apricots.
Apricot Stonington is a beer that is very dear to Trillium founders JC and Esther.
The wine is fermented using wild yeast extracted from grape skins at Saltwater Farm Vineyard in Stonington, Connecticut, the winery where the couple was married and which inspired them to decide to start a brewery.
After fermentation, the wine is aged for 16 months in French oak Chardonnay barrels before being slowly placed in stainless steel tanks with apricots for a second fermentation.
The color is a slightly cloudy orange and yellow, and the aroma is vibrant with peach, white grapes, oak barrels, and an earthy funk.
The taste is reminiscent of apricot honey and yellow peach with a biscuit-like malt backbone, and finally the flavor of oak barrels lingers on the tongue.
The finish is slightly sweet, with a pleasant acidity and a light mouthfeel.
