Apricot Stonington is a beer that holds special meaning for Trillium founders JC and Esther.
It is fermented using wild yeast harvested from grape skins grown at Saltwater Farm Vineyard in Stonington, Connecticut, the very winery where the couple got married and where they decided to establish their brewery.
After fermentation, it is aged for 16 months in French oak Chardonnay barrels, and then further aged in stainless steel tanks with apricots, allowing for a slow secondary fermentation.
The color is a hazy, pale orange and yellow, and the aroma presents a vibrant peach-like scent, along with white grapes, oak barrels, and an earthy funkiness.
The taste offers honeyed apricot and yellow peach notes, underpinned by a biscuity malt backbone, with an lingering oak flavor on the tongue.
The finish is subtly sweet, characterized by a pleasant acidity and a light mouthfeel.
