"Nitro Merlin" is a classic milk stout made by adding lactose to an oatmeal stout.
It is based on the Velvet Merlin, a limited edition product that was previously released every fall/winter season, which has been beautifully transformed into a milk stout and infused with nitrogen gas (note).
The name is a combination of Nitro, which means nitrogen in English, and Merlin, the nickname given to brewmaster Matt Brynildson by co-founders Adam Firestone and David Walker.
Matt says he's experimented with making Velvet Merlin into a milk stout and bottling it under nitrogen gas in the past, but this is the first time he's combined the two.
He explains, "The addition of lactose to Velvet Merlin is like adding cream to dark roasted coffee, helping to balance the bitterness of the roasted malt and hops.
The result is a smooth stout with a mellow aroma and rich sweetness.
It's a flavor that can only be achieved by filling it with nitrogen gas.

After the beautiful bubble show, a pitch black liquid peeks out from the glass, with creamy off-white bubbles on top.
The nose features aromas of roasted grains, subtle coffee and chocolate, with a hint of lactose.
The taste is a skillful blend of coffee, chocolate flavor from roasted malt, and the sweetness of lactose, reminiscent of chocolate milk.
It has a relatively light body and a very creamy mouthfeel that is unique to nitrogen.

The technique of serving beer with nitrogen gas originated from an attempt to recreate the elements that are characteristic of traditional British pub culture and cask ale, such as the unique creamy foam, an extremely smooth mouthfeel that allows you to enjoy the original flavor of the beer, and a slight carbonation, using nitrogen gas.
Matt Brynildson explains the nitrogen gas filling as follows:
“Conditioning cask ale, which continues to ferment inside the barrel, requires careful attention because it is a ‘living beer’.
In contrast, the method that uses nitrogen gas has the advantage of lowering the risk of contamination and maintaining stable quality, as nitrogen is added and filled when the fermented beer is bottled in barrels.
To recreate the creamy foam and smooth mouthfeel of cask ale, filling with nitrogen gas is the best solution.
I want you to pay attention not only to the taste, but also to the spectacle of bubbles cascading down like a waterfall when poured into a glass.
