An oak-aged sour ale with apricots and vanilla beans.

While having a refreshing tartness, it is full of fruitiness and offers an otherworldly deliciousness! The beers in this series are not kettle sours, but traditional sour ales that have been slowly fermented and aged in barrels with thousands of kilograms of apricots.

All sour beers brewed by Almanac are fermented using a blend of regular brewer's yeast (Saccharomyces), wild yeast (Brettanomyces), lactic acid bacteria (Lactobacillus), and other new strains of bacteria.

This mixed culture allows for long-term fermentation over several months in oak barrels using real fruit.

For the finishing touch, carefully selected beers from multiple barrels are expertly blended to achieve the desired flavor, resulting in a sour beer with a deep yet multi-dimensional umami.
