Last year, the El Segundo brewing team discovered Idaho 7, a relatively new hop variety, and immediately fell in love.
To maximize its captivating hop aroma, flavor, and smooth bitterness, they adopted a technique called "hop burst."
"Hop burst" is a method where all hops are added just before the end of the boiling process, extracting only fruity and rich aromas before any harshness or off-flavors from the hops can be extracted.
Along with a ripe mango-like aroma from the hops, a toasty, bread-like malt aroma rises from the liquid's surface.
Upon tasting, flavors of pine and tree sap emerge, accompanied by a full mouthfeel of candied citrus.
Afterward, you'll detect ripe mango and a faint fruitiness with a subtle malt sweetness.
The carbonation level is carefully maintained to soften the bitterness from the large amount of hops used, resulting in a lighter flavor.
It's dry, yet leaves a gentle and pleasant bitterness on the finish.
