Trillium Oenobier: Pinot Noir, Pinot Meunier & Chardonnay Grape Juice (355ml)

After fermentation in an oak barrel, it is transferred to a stainless steel barrel and aged with three types of wine grape juice. To finish, it is fermented in the bottle for a second time, giving it a refreshing flavor and carbonation like champagne.

Oenobier is a series that explores the boundary between beer and wine, and continues to experiment with the aim of fusing the best aspects of each.

This project started with the collaboration of brewing the first product, Oenobier, with Monkish.

Trillium was born with the goal of making beers that accompany people's happy moments, and the Oenobier series is a masterpiece that is perfect for enjoying at such celebratory occasions.

This wine was brewed in November 2016 and took over four years to complete.

The wine is first aged for several years in oak barrels, then aged for a further two years in stainless steel tanks with three types of wine grape juice.

Finally, yeast residue remaining after fermenting the wine is added and the secondary fermentation takes place in the bottle in an aging room, resulting in lively carbonation like that of champagne.

The three types of grape juice used - Pinot Noir, Pinot Meunier, and Chardonnay - are also used in traditional French Champagne wineries.

It has a strong mineral flavor of white wine and muscat skin, a soft yet robust oak barrel flavor, and an aroma reminiscent of clover honey.

The flavor has a subtle citrus flavor and a pleasant hint of New England wild yeast.

Thanks to its well-balanced flavor, you won't really feel the alcohol, and you can enjoy gentle tannins and elegant carbonation.
