Trillium Oenobier: Pinot Noir, Pinot Meunier & Chardonnay Grape Juice (355ml)

Aged in oak foudres, then transferred to stainless steel barrels where three types of wine grape must were added for further aging. Finished with bottle conditioning, resulting in a refreshing champagne-like flavor and carbonation.

Oenobier is a series that continually experiments with the goal of exploring the boundaries between beer and wine, and fusing the best qualities of both.

This project was launched following the collaborative brewing of the first Oenobier with Monkish.

Trillium was born with the aim of creating beers that accompany people's happy moments, and this Oenobier series is truly a masterpiece perfect for enjoying at such celebratory occasions.

This particular creation was brewed in November 2016 and took over four years to finish.

First, it was aged in oak foudres for several years, then transferred to stainless steel tanks where three types of wine grape must were added for another two years of aging.

Finally, after the wine had fermented, the lees (residual yeast) were added, and it underwent secondary fermentation in the bottle in an aging room, resulting in a lively, champagne-like carbonation.

The three grape musts used—Pinot Noir, Pinot Meunier, and Chardonnay—are also used in traditional French champagne production.

It offers aromas of strong mineral white wine, Muscat grape skin, a soft yet firm oak barrel flavor, and clover honey.

The flavor presents a subtle citrus note and a pleasant wild yeast character typical of the New England region.

Thanks to its well-balanced taste, the alcohol content is barely noticeable, offering gentle tannins and elegant carbonation.
