The Barrel-Aged Series is one of Founders' identities.
"Canadian Breakfast Stout (CBS)" was released on Founders' 20th anniversary.
The name probably includes "Canadian" because the barrels used to make maple syrup, a Canadian specialty, are reused.
Breakfast Stout, an imperial stout with chocolate and coffee, is aged in bourbon barrels that have been used to age maple syrup.
Since its release, this beer has gained instant popularity and is known as a rare, ultra-limited edition that many beer geeks are desperate to get their hands on.
The aging cellar is located inside a cave about 85 feet (about 25 meters) below ground level.
Originally a gypsum mining cave, it is now used by Founders as an aging cellar.
As of April 2016, the project has over 9,000 bourbon barrels and is said to be the largest barrel aging project in the United States.
This area, located deep underground, naturally has the perfect cellar temperature for maturing beer.
The aroma is concentrated roasted coffee, maple syrup, milk chocolate, vanilla, oak and bourbon that overflows from the glass.
When you put it in your mouth, the roasted flavor and sweetness of maple, coffee and chocolate envelops your entire tongue, while at the same time the bourbon, vanilla and slight bitterness of hops spread in a balanced way.
The finish is also pleasant with a long aftertaste of bourbon, warm alcohol, and a slight malt sweetness.
