Belgian-style sour ale fermented in oak barrels and then aged in oak barrels with peaches and apricots.
Cuvee Wallingford is a delicate blend of one, two, and three-year-old batches.
When poured into a glass, an intense and rich apricot aroma rises, followed by floral notes reminiscent of roses and lavender, straw, and ripe peach.
The surprisingly gentle mouthfeel reveals peach and apricot characteristics, minerality, and a light earthiness.
Rounded fruity acidity and balanced bitterness are softly enveloped by the gentle flavor of oak barrels, culminating in a pleasantly dry finish.
