Secondary fermentation and aging in oak barrels with local peaches. A balanced coexistence of ripe peach juiciness, firm acidity, and the unique flavor of wild yeast.
Belgian-style sour ale, secondary fermented and aged in oak barrels with peaches.
The name is derived from "Careful with That Axe, Eugene," a song by the British rock band Pink Floyd.
We source fresh peaches from local farms, Regier Farms and Sunny Cal Farms, and add an incredible amount—over 1.3 kg per 3.7 liters.
As soon as it's poured into a glass, the juicy aroma of ripe peaches, bursting with fruitiness, whets the drinker's appetite.
Upon tasting, a firm acidity and the unique flavor of wild yeast combine with a rich peach flavor.
Despite its fruity and rich taste, the crisp, acidic finish is addicting!
