The Bruery is an American brewery with three distinct brands.

 

The Bruery has garnered high acclaim for its modern interpretations of traditional styles, such as stouts and Belgian-style beers, through rich originality.

 

Bruery Terreux brews meticulously crafted sour ales using wild yeast. Offshoot Beer was created as a brand specializing in IPAs, in response to requests from fans.

 The Bruery, to begin with, specializes in traditional-style beers that do not use wild yeast, but are instead reinterpreted with a modern twist using their unique sensibilities and creativity. They have been highly acclaimed by many beer connoisseurs for their Belgian-style ales and stouts aged in spirit barrels, such as bourbon.

 

As part of The Bruery's policy, they do not heat treat or filter their beers, and they value the carbonation that arises from bottle conditioning, which involves a secondary fermentation in the bottle.

 

Most of the beers produced use their proprietary Belgian yeast, and in addition to traditional adjuncts like coriander and orange peel, they use a wide range of ingredients including lavender, maple syrup, and occasionally Thai basil.

 

In addition to the above, challenging techniques such as barrel aging produce a distinctive flavor with depth and complexity.

In June 2014, The Bruery announced the launch of "Bruery Terreux," a new brand specializing in farmhouse ales and sour ales made with wild yeast, calling it a "major step for growth."

 

The "Terreux" in Bruery Terreux is French, and in English it means "Earthy." As the name suggests, this brand is inspired by nature and aims to create natural flavors in a natural and innovative way. They "weave stories of wildly traditional biére" with their own interpretation and techniques.

 

Furthermore, from a quality control perspective, separating breweries that use wild yeast from those that do not is important and beneficial.

This is because wild yeast can spread from barrel to barrel, potentially contaminating the entire brewery if not handled properly, and countermeasures are not easy. In fact, The Bruery itself struggled with contamination control, and it almost became a problem that could have led to the downfall of the brand.

 

Therefore, The Bruery and many other breweries took the wise step of setting up entirely new facilities to use wild yeast.

For brewing, the wort is produced at the original Placentia facility, then transported 3-4 km to Bruery Terreux in Anaheim, where all subsequent operations such as fermentation, aging, and packaging are carried out.

 Then, in 2017, the third brand, Offshoot Beer Co., was born.
It is located at the same address as The Bruery.

 

From the beginning, Patrick Rue had declared that he would "not brew IPAs."
However, in response to the recent rise of IPAs and the wishes of fans,
he launched "Offshoot Beer," a brand specializing in IPAs.

 

The stance is that "The Bruery will continue not to brew IPAs, as before."

 

Unlike the other brands up to that point,
it focuses on brewing relaxing beers with a pop design and refreshing taste.

 


With these three brands,
The Bruers have truly created an unassailable lineup covering all bases,
and will undoubtedly continue to delight the palates of beer lovers in America,
and indeed, around the world.
