Harmony and Levi have both been homebrewing craft beer for over 10 years. Their passion and curiosity for beer have led them all over the world, including New Jersey, New York, Atlanta, Israel, and Italy. Then, to realize their dream of opening their own brewery, they returned to Levi's hometown of Long Beach and started LBBL in 2017.

 

What distinguishes LBBL is that it leverages its unique history to brew craft beers using scientific methods and analysis.

The Harmony of Fermentation and Yeast Specialists Supporting Business Management

 Harmony, a specialist in fermentation and yeast and a chef with a wide range of activities, is an indispensable presence in LBBL's management.

 

As co-founder and co-owner of LBBL, Harmony is a French pastry chef with extensive management experience in renowned kitchens. He trained at the Ritz-Carlton and honed his outstanding skills through experience in restaurants around the world.  

 

In 2020, he obtained the "Certified Bread Baker" qualification from the American Bakers Association, and is a board member of the association, an advisor to "Long Beach Fresh," an NPO that promotes urban agriculture,  

 

He is also known as the author of "Yeast: Fermentation Handbook," a specialized book on fermentation and yeast, and his activities are diverse.

 

Harmony leverages his passion, experience, and knowledge of grain and yeast fermentation to establish and operate multiple businesses, including LBBL, Harmony Kiosk LLC, Long Beach Bread Lab, and Long Beach Spirits Lab.  

Environmentally-Friendly Brewery and
Urban Agriculture Contributing to the Community

 LBBL operates in an environmentally friendly manner by thoroughly reusing grains and supplying electricity through solar power generation. We partner with eco-friendly suppliers.

All spent grains from the brewing process are reused as animal feed. Additionally, solar power supplies energy to the kitchen.

 

We grow many vegetables at urban farms in our local Long Beach and support the regional food industry in cooperation with Long Beach Farms.

One of the yeasts used in the brewery was made from grape skins growing in Levi's mother's backyard. This is not only used for brewing beer but also for the sourdough pizzas served in the taproom.

 

 

Levi, who brews beer daily based on research and science, and Harmony, who bakes bread at the bakery attached to the brewery while writing a book on yeast, are a unique duo in the industry. Please try LBBL's beer, which is making its presence felt even in the Long Beach area of California, which is becoming a battleground for craft beer in recent years.
