This beer is krausened in the Ruhkeller, which means "storage cellar" in German.

Krausening is one of Germany's traditional methods, promoting natural carbonation without using sugar or adjuncts.

By adding a few percent of wort from a different beer at the peak of its primary fermentation, additional sugars are provided to the yeast.

During this process, the beer is rapidly cooled and "lagered" (German for stored).

While such traditional methods are very time-consuming and labor-intensive, the magnificent result makes all the effort worthwhile.
