Its founders are husband and wife, Bill and Michelle Tressler.
They renovated an old local cheese factory
and started this venture with almost no money, aiming to create "beer and food that move people's hearts."

Recreating classic beer from a unique perspective
 

The brand name "Hinterland" means
"undeveloped land" or "unexplored territory," and
symbolizes their free-spirited brewing that defies convention,
and their curiosity for the unknown.

 

Even 30 years after its founding, Bill and Michelle remain at the forefront,
exploring new flavors and experiences while flexibly adapting to changing times.
And their founding belief that "beer connects people" remains unchanged,
as they continue to grow on their "journey into the unknown (Hinterland)."

The founder's philosophy and passion

Bill was originally a homebrewer who made beer at home.

 

His passion eventually led him to edit a beer specialty magazine in San Francisco, enroll in the brewing program at UC Davis, and
study brewing at the American Brewers Guild, starting him on a professional path.


As he says, "Every day is a chance to create something new," he is not only particular about brewing beer,
but also about connecting with people and pairing beer with food.

Gastropub offering the best pairing experience

 Since its inception, Hinterland has been more than just a brewery.

It has operated alongside a farm-to-table restaurant that utilizes local ingredients.

 

At the time of its founding, the fact that they sourced fresh seafood daily by air freight

and collaborated with chefs to pursue an authentic food and beer pairing experience was also groundbreaking.

 

Later, the brewery relocated to a former meat processing warehouse,

and currently operates a large-scale facility in the Titletown District,

adjacent to Lambeau Field, the home of the NFL's Green Bay Packers.

Building a Management Foundation to Support Sustainable Growth

In addition to its own restaurant, Hinterland diversifies its revenue streams through three main pillars: hospitality, wholesale, and contract brewing.


Having successfully built a stable management foundation, it is known as a sustainably growing craft brewery even in the US.

 

The approximately 2,200 square meter (24,000 square feet) space, which combines a brewery and a restaurant, boasts a scale of about 300 indoor seats and 200 outdoor seats.

 

Its annual production is approximately 6,000 barrels (about 700,000 liters),
with the capacity to handle up to 8,000 barrels.

Equipped with its own canning line, it also ships to regional markets such as Chicago and northern Michigan.
